Super Loaded Turkey, Black Bean, and Sweet Pepper Nachos

Ingredients

  • Pure olive oil nonstick cooking spray
  • 1 pound 99% fat free ground turkey
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 15- ounce can low sodium black beans rinsed and drained
  • ½ 6.25 ounce bag baked tortilla chips
  • 8 sweet peppers cored, seeded, and halved
  • 4 ounces skim mozzarella cheese
  • 1 head Romaine thinly sliced
  • 1 cup grape tomatoes halved
  • 1 jalapeno thinly sliced, or to taste
  • ½ cup cilantro leaves
  • Quartered limes for serving
  • Coarse kosher salt and freshly ground black pepper

Instructions

  • Heat the oven to 400°F. Line a baking sheet with aluminum foil or a non-stick silicone baking mat. Set aside.
  • Heat a large skillet over medium high heat. Spray with nonstick spray. Add the turkey. Season with cumin and coriander. Season with salt and pepper. Cook, stirring often, breaking up the meat until mostly white and cooked through, 3 to 5 minutes. Add the black beans and stir to combine.
  • Place the chips on the prepared baking sheet. Scatter pepper halves around. Top with turkey-black bean combination. Scatter cheese on top. Transfer to the oven and bake until cheese is melted, 5 to 7 minutes.
  • Remove from the oven and top with lettuce, tomatoes, jalapenos, and cilantro. Squeeze lime over and serve immediately.
