High Protein Turkey Skillet Taco Salad

Ingredients

  • Nonstick spray
  • 1 red onion chopped
  • 1 poblano pepper cored, seeded, and chopped
  • 1/4 jalapeno cored, seeded, and finely chopped, or to taste
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 15.5 ounce can low sodium beans such as kidney black bean, or pinto, rinsed and drained
  • 1 cup shredded low moisture part skim mozzarella cheese
  • 1 cup grape tomatoes, halved
  • ¼ cup fresh cilantro leaves for serving
  • 8 cups shredded lettuce
  • 64 Baked Tostitos
  • Hot sauce for serving

Instructions

  • Heat the oven to broil. Spray a large ovenproof skillet with nonstick spray and place over medium-high heat. Add the onion, poblano, and jalapeno peppers. Cook until starting to become tender, about 3 minutes.
  • Add the turkey, cumin, and coriander. Season with salt and pepper.
  • Cook, stirring often to break the turkey up, 5 to 7 minutes. Add the beans and stir to combine. Cook until heated through, 3 to 5 minutes.
  • Sprinkle the cheese on top and place under the broiler. Cook until melted, about 2 minutes depending on the strength of your broiler. Remove from the oven.
  • Meanwhile, divide the lettuce and chips between four bowls. Top with equal portions of the turkey mixture. Add chips and tomatoes to each. Toss to combine. Season with hot sauce and serve immediately.
