Pepper Crusted Roast Cabbage

Choose fresh, high-quality cabbage by looking for a vibrant, shiny color, tight leaves, and a firm, dense feel that is heavy for its size. The head should not have soft spots, splits, or dark, slimy, or discolored spots. Savoy cabbage is a versatile cabbage, similar to green cabbage but a bit milder and sweeter, with leaves that are looser and more ruffly.
You can control the heat by the pepper you choose.
