Pimenton de la Vera is a special type of smoked paprika governed by a Denominacion de Origen, similar to Appellation d’origine Contrôlée in France or Italy’s Denominazione di Origine Controllata.
“Controlled origins” are strictly governed certifications that ensure the authenticity of the product and that the ingredient adheres to the highest standards of growth, harvest, and production.
Pimenton de la Vera peppers are slow-roasted over oak fires and hand-turned during a two-week process! Then, the peppers are very slowly ground between stone wheels into a fine powder.
The smoked paprika comes in three varieties: sweet and mild (dulce), bittersweet medium hot (agridulce), and hot (picante).

Last weekend I participated in the MFK Fisher Writer’s Symposium hosted by the Nashville chapter of Les Dames d’Escoffier. It was incredible and I was also able to meet one of my food sheroes, Marion Nestle.
Dr. Nestle is the Paulette Goddard Professor, of Nutrition, Food Studies, and Public Health, Emerita, at New York University, which she chaired from 1988-2003 and from which she officially retired in September 2017. She is also a Visiting Professor of Nutritional Sciences at Cornell and earned a Ph.D. in molecular biology and an M.P.H. in public health nutrition from the University of California, Berkeley.

Romesco Sauce
Ingredients
- 1/2 cup almonds toasted
- 1 jar roasted red bell peppers drained
- 1/2 cup tomato puree
- 2 garlic cloves plus more for garnish
- 1 tablespoon smoked paprika
- 1/3 cup sherry wine vinegar
- 2/3 cup extra-virgin olive oil plus more for garnish
- Coarse kosher salt and freshly ground black pepper
