Self-Care Technique

We’re all pretty familiar with setting an alarm to wake up in the morning. How about setting an alarm to let you know when you need to go to bed?

We are a nation of sleep deprived people. Well & Good shares, “The recommended amount of sleep for the average adult is seven to eight hours, yet many of us are not clocking our zzz’s for quite so long thanks to everything from anxiety to late-night boredom. In effect, this can preclude us from reaping restorative benefits of rest for both cognitive and physical function.”

I start 1 hour out and then 30 minutes before so I can strive for lights out by 11:30 pm. I’m a natural night owl, so these reminders help me stay on track.

According to PBS, Labor Day was established in 1894 to celebrate and honor the unions who fought for the rights of the American worker. Beginning in the Industrial Revolution workers from industries as far reaching as textiles, railroads, and automotives struggled to secure safer working conditions, fair pay, benefits, and the right to unionize.

The National Women’s Museum website shares that Dolores Huerta is one of the most important feminist activists of the 20th century. She helped formed the United Farm Workers Union alongside fellow organizer Cesar Chavez and helped farm workers, immigrants, and women get treated more fairly.

Jalapeño Corn Dip

Servings: 6

Ingredients

  • Nonstick spray
  • ½ sweet onion diced
  • 2 ½ cups fresh corn kernels 4-6 ears
  • 1 jalapeño pepper seeded and finely chopped
  • ÂĽ cup low-fat mayonnaise
  • ÂĽ cup fat-free skyr or yogurt
  • Zest and juice of 1 lime
  • 1 teaspoon ancho chili powder
  • 3/4 cup crumbled queso fresco (4 ounces) divided
  • â…› teaspoon cayenne pepper
  • Chopped cilantro for garnish
  • Sliced jalapenos for garnish
  • Tortilla chips for serving

Instructions

  • Heat oven to 350°F. Heat a large skillet over high heat until hot but not smoking. Spritz with nonstick spray. Add onion, corn, and jalapeño and cook, without stirring, until lightly charred, about 3 minutes.
  • Stir and cook for another 3 minutes. Transfer the mixture to a medium bowl. Stir in mayonnaise, yogurt, lime juice, chili powder, and 1/2 cup queso fresco.
  • Spread the mixture in an ovenproof 1-quart baking dish. Top with the remaining 1/4 cup queso fresco and sprinkle with cayenne. Bake until the cheese is melted and the outer edges begin to bubble, 10 to 12 minutes. Garnish with chopped cilantro and serve with tortilla chips.
