My dear friend Evan and I have been friends for nearly 40 years. (!!) We now have a standing Friday night date of yoga and dinner with his family. It’s a commitment that is dear and holds tremendous meaning for me.

I see my friend Becky every 2 weeks, my friend Debi every 3 weeks, and my friend Barb about once a month. I make certain to text Claire on the regular and am in touch with Bobby about every 6 weeks.

Self-Care Strategy

Are you seeing more of your friends online than in real life? Are you wasting your life on your phone like so many of us?

I’ve got good/bad news. There are apps for that.

Social media is part of my work and it’s part of my fun, but it was getting to be too much. Honestly, I was having a hard time shutting it off. I knew I needed a tool to help me.

I downloaded Opal, an app-blocking app that’s rated very highly for its effectiveness.

  • The app is not super intuitive.
  • It’s an ongoing process to figure out what works best.
  • It’s $100 a year for a subscription, and I was mad at myself for having to pay for something when I should just be able to put down the damn phone.

Well, I love it!

Ideas and Inspiration

Sharing this because I know people may want to show grief and honor Dr. Jane Goodall, who passed away this week at age 91. 

She was one of my original “sheroes.” As a little girl, I remember being in absolute awe of her. Still am.

She lived in the jungle, she wasn’t a “Mrs. anyone,” and was a scientist who worked with National Geographic, the banner-bearer for exploration and adventure.

Later, I also learned she was so much more than data, studies, and numbers. She was truly inspirational.

Last year, I bought her “selfie” print from @vital.impacts, a nonprofit women’s organization that uses powerful visual storytelling to support conservation. She supported their work by sharing her own collection.

Make it Count

How many tacos would you eat? 2? 3? Ok, if you cut those 3 corn tortillas into 4 triangles, it’s 12 chips. If you sit down with a bowl of queso and chips would you stop at 12? Doubtful.

If you don’t want temptation in your house, don’t let the devil in the door. 

Tostitos are standard operating procedure in my house. With 50% less fat, that’s what I nearly always use for taco salads, chips and dip, and nachos, too. (Hey — give these Sweet Pepper Nachos a try.)

High Protein Turkey Skillet Taco Salad

Ingredients

  • Nonstick spray
  • 1 red onion chopped
  • 1 poblano pepper cored, seeded, and chopped
  • 1/4 jalapeno cored, seeded, and finely chopped, or to taste
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 15.5 ounce can low sodium beans such as kidney black bean, or pinto, rinsed and drained
  • 1 cup shredded low moisture part skim mozzarella cheese
  • 1 cup grape tomatoes, halved
  • ¼ cup fresh cilantro leaves for serving
  • 8 cups shredded lettuce
  • 64 Baked Tostitos
  • Hot sauce for serving

Instructions

  • Heat the oven to broil. Spray a large ovenproof skillet with nonstick spray and place over medium-high heat. Add the onion, poblano, and jalapeno peppers. Cook until starting to become tender, about 3 minutes.
  • Add the turkey, cumin, and coriander. Season with salt and pepper.
  • Cook, stirring often to break the turkey up, 5 to 7 minutes. Add the beans and stir to combine. Cook until heated through, 3 to 5 minutes.
  • Sprinkle the cheese on top and place under the broiler. Cook until melted, about 2 minutes depending on the strength of your broiler. Remove from the oven.
  • Meanwhile, divide the lettuce and chips between four bowls. Top with equal portions of the turkey mixture. Add chips and tomatoes to each. Toss to combine. Season with hot sauce and serve immediately.
