They also have a No Eating Out Challenge with lots of tips on how to eat at home, including replicating your favorite restaurant meals.  That’s where this recipe for Chipotle Adobo Ranch Dressing comes in! Why go out to eat when you can make it at home better and cheaper?

For this Chipotle Adobo Ranch Dressing, all you need are canned chipotles en adobo. Chipotles are smoked and dried jalapeños. Adobo is a sweet and tangy purée of tomato, vinegar, garlic, and spices. Chipotles in adobo are smoked and dried jalapeños that are rehydrated and canned in this flavorful sauce. Since there are multiple chili peppers in each can, I remove what I need and then transfer the remaining chipotles and adobo to a glass jar. Label and date it for later use. They will last indefinitely.

You may take photos, pick some beautiful flowers, or just enjoy a peaceful time watching the flowers sway in the breeze with the bees & butterflies.

Turkey Tenderloin with Chipotle Adobo Ranch Dressing

Ingredients

  • pounds turkey tenderloin (2 pieces)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon coarse kosher salt
  • 1/4 teaspoon freshly ground pepper
  • ½ cup 0% skyr or Greek yogurt
  • ¼ cup light mayonnaise
  • 2 tablespoons mixed chopped fresh herbs such as parsley basil, dill, and cilantro
  • 2 tablespoons adobo sauce
  • 1 chipotle pepper from a can of chipotles in adobo sauce, chopped
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • limes, for serving
  • cilantro, for garnish

Instructions

  • Season both sides of the tenderloins with the cumin, coriander, salt, and pepper. Heat a grill pan over medium-high heat. Spray with nonstick spray. Sear the tenderloins on both sides, about 2 minutes. Cover and cook until the turkey is firm and the internal temperature registers 160 degrees when measured with an instant-read thermometer, about 10 minutes.
  • Meanwhile, combine the yogurt, mayonnaise, herbs, adobo, chopped chipotle, apple cider vinegar, garlic powder, and onion powder in a small bowl. Taste and adjust for seasoning with salt and pepper.
  • Slice the turkey against the grain and serve with Chipotle Adobo Ranch Dressing.
